Ingredients

Ingredient Amount Notes
Sugar 4 Tbsp  
Salt 2 tsp  
Flour 4 Tbsp  
Dry Mustard 3 tsp  
Cayenne Few grains  
Eggs 4 Yolks only - slightly beaten
Milk 1½ cups  
Vinegar ½ cup Mild Vinegar
Butter 1 Tbsp  

Method

  1. Separate eggs and discard whites
  2. Slightly beat egg yolks
  3. Mix dry ingredients
  4. Add egg yolks and milk
  5. Cook while stirring constantly in double boiler until thick
  6. Add vinegar and butter
  7. Mix well and cool
