Ingredients
| Ingredient | Amount | Notes |

| Sugar | 4 Tbsp | |
| Salt | 2 tsp | |
| Flour | 4 Tbsp | |
| Dry Mustard | 3 tsp | |
| Cayenne | Few grains | |
| Eggs | 4 | Yolks only - slightly beaten |
| Milk | 1½ cups | |
| Vinegar | ½ cup | Mild Vinegar |
| Butter | 1 Tbsp |
Method
- Separate eggs and discard whites
- Slightly beat egg yolks
- Mix dry ingredients
- Add egg yolks and milk
- Cook while stirring constantly in double boiler until thick
- Add vinegar and butter
- Mix well and cool
