Crisp Onion Rings

| Sweet Onions | 3 or 4 | |
| Flour | 1 cup | |
| Baking Powder | 1½ tsp | |
| Salt | ½ tsp | |
| Eggs | 1 | |
| Water | ⅔ cup | |
| Lemon Juice | ½ Tbsp | |
| Butter | 1 Tbsp | Melted |
Method
- Peel onions
- Cut into ¼ inch slices
- Separate into rings
- Sift together flour, baking powder, and salt
- Beat egg and add water and lemon juice
- Beat egg mixture until frothy
- Stir in dry ingredients to make a batter
- Melt butter and add to batter
- Heat frying fat to 375 °F
- Add all onion rings to batter at same time
- Stir until coated
- Sift out one by one
- Fry 2 minutes on each side
- Drain on paper towels
- Keep cooked onions warm in slow oven until all rings are fried
