| Eggplant | Optional - may substitute for Tomatoes | |
| Flour | ||
| Egg | ||
| Milk | ||
| Salt | ||
| Olive Oil | ||
| Salad Oil | Optional - May substitute for Olive Oil |
Method
- Slice Tomatoes
- Sprinkle Tomato slices with flour
- Beat egg and add a little milk
- Dip tomato slices in egg mixture
- Remove tomatos from egg mixture and then salt
- Fry gently in deep hot Oil
- Turn only once to brown second side
- Lay on paper towel to drain
