Ingredients

Duck    
Onions 2 + 1 One sliced
Carrot 1 Sliced
Celery 2 ribs  
Garlic 1 small clove  
Salt Pork   Use salt pork or bacon
Bacon   Use salt pork or bacon

Method

  1. Preheat oven to 450F
  2. Dress duck
  3. Place into baking dish
  4. Put 2 onions insdie duck
  5. Slice third onion, carrot, celery, and garlic
  6. Arrange slcied vegetables in baking dish around duck
  7. Put sliced salt pork or bacon on top of duck
  8. Bake 2 hours or until tender
  9. Add a little water if duck dries while baking

Notes From Gran

  • For wild duck, cut the back bone before cooking to avoid strong taste
