| Carrot | 1 | Sliced |
| Celery | 2 ribs | |
| Garlic | 1 small clove | |
| Salt Pork | Use salt pork or bacon | |
| Bacon | Use salt pork or bacon |
Method
- Preheat oven to 450F
- Dress duck
- Place into baking dish
- Put 2 onions insdie duck
- Slice third onion, carrot, celery, and garlic
- Arrange slcied vegetables in baking dish around duck
- Put sliced salt pork or bacon on top of duck
- Bake 2 hours or until tender
- Add a little water if duck dries while baking
Notes From Gran
- For wild duck, cut the back bone before cooking to avoid strong taste
