Ingredients

Ingredient Amount Notes
Dates 1 cup  
Water 1½ cups Boiling
Eggs 2 Beaten light
Sugar 1½ cups  
Flour 2¼ cups + extra Sifted
Baking Soda 2 tsp  
Baking Powder ¼ tsp  
Salt ½ tsp  
Butter 2 Tbsp Melted
Vanilla 1 tsp  
Nuts   Floured and Chopped

Method

  1. Preheat oven to 325 °F
  2. Cut up dates
  3. Boil 1½ cups water and cover dates in boiling water
  4. Let dates soak for 10 minutes
  5. Beat eggs until light
  6. Add sugar to eggs and cream together
  7. Mix together sifted flour, baking soda, baking powder, and salt
  8. Add dry ingredients together alternating to egg mixture alternating with liquid from dates
  9. Melt butter and add to batter
  10. Add vanilla
  11. Fold in pieces of dates
  12. Chop and flour nuts and fold in
  13. Line pan with well greased parchment paper (see modern notes)
  14. Bake 1 to 1¼ hours

Modern Notes

  • The original recipe calls for lining the pan with “well greased heavy wax paper” but wax paper, even heavy wax paper is not oven safe. I transcribed as parchment paper since that serves the purpose and is actually intended for oven use
