Ingredients

Ingredient Amount Notes
Eggs 3 separated
Corn 1 1/2 cups grated fresh
Salt 1/2 tsp  
Pepper 1/8 tsp  
Flour 1/2 cup  
Crisco 1/3 cup for frying

Method

  1. Grate corn off the cobs.
  2. Separate eggs.
  3. Beat yolks until light.
  4. Add corn, seasonings, and flour.
  5. Stir to blend.
  6. Beat egg whites until stiff. Then, fold into mix.
  7. Heat Crisco or other shortening in skillet.
  8. Drop by Tablespoons into hot shortening.
  9. Cook until a nice brown, turning only once.
  10. Drain on paper towels.

    Notes From Gran

    Serve with butter, syrup, or jam. Nice with bacon, sausage, or chicken.
