Corn Fritters

Ingredients

| Eggs | 3 | separated |
| Corn | 1 1/2 cups | grated fresh |
| Salt | 1/2 tsp | |
| Pepper | 1/8 tsp | |
| Flour | 1/2 cup | |
| Crisco | 1/3 cup | for frying |
Method
- Grate corn off the cobs.
- Separate eggs.
- Beat yolks until light.
- Add corn, seasonings, and flour.
- Stir to blend.
- Beat egg whites until stiff. Then, fold into mix.
- Heat Crisco or other shortening in skillet.
- Drop by Tablespoons into hot shortening.
- Cook until a nice brown, turning only once.
- Drain on paper towels.
Notes From Gran
Serve with butter, syrup, or jam. Nice with bacon, sausage, or chicken.
