Lobster Canapes

Ingredients

| Lobster Meat | ¾ lb | Cooked and Ground |
| Onion | 2 Tbsp | Minced |
| Eggs | 2 | Beaten |
| Salt | ½ tsp | |
| Black Pepper | Freshly Ground | |
| Corn Meal | ¾ cup | Yellow Cirn Meal |
Method
- Heat Cooking oil to 375 °F in deep frier or in a large pot on stovetop
- Cook and grind lobster if making from fresh
- Mince onion
- Beat eggs
- Combine all ingredients and mix well
- Shape into balls
- Roll in corn meal
- Fry in a basket for 3 minutes
- Drain
