Corn Chowder

Ingredients

| Salt Pork | ½ lb | |
| Onion | 1 large | Chopped |
| Potatoes | 2 med. | Cubed |
| Chicken Broth | 2 cups | |
| Salt | 1 tsp | |
| Corn | 1½ cups | Cut from the cob |
| Seasoned Pepper | ½ tsp | |
| Half + Half | 2 cups |
Method
- Chop onion
- Cube potatoes
- Cut corn from cob
- Soak pork in boiling water for 5 minutes
- Cut soaked pork into 1 inch by ¼ inch strips
- Fry pork strips until crisp
- Remove pork strips from heat and set aside
- Saute onions in the fat used to fry the pork
- Add potatoes and broth to sauteed onions
- Cover and simmer until potatoes are tender
- Add corn, salt, and pepper
- Cook 5 minutes
- Stir in Half + Half
- Bring to a boil
- Sprinkle top with pork strips
