| State Of Maine Dry Beans | 2 lbs | |
| Salt Pork | ½ lb | |
| Sugar | ¼ cup | |
| Molasses | ⅔ cup | |
| Dry Mustard | 2 tsp | |
| Pepper | ½ tsp | |
| Salt | 1½ Tbsp | |
| Onion | 1 large | Quartered |
| Maple Syrup | 1 cup | Optional - Substitute for Molasses if making variant |
| Catsup | 1 cup | Optional - for Variation |
| Vinegar | 1 Tbsp | Optional - for Variation |
Method
- Pick over beans
- Soak overnight in cold water
- In the morning parboil beans until skins cracks when blown on
- Preheat oven to 300 °F
- Quarter Onion and put into bottom of a new pot
- Add beans to pot on top of onion
- Put Salt pork on top of beans
- Boil 1 pint of water in a separate container
- Mix togther Sugar, Dry Mustard, Pepper and Salt with boiling water
- Add Molasses or Maple Syrup to Sugar Mixture
- Cut ½ inch through rind of pork
- Pour sugar mixture on top of Salt Pork
- If making variation add Catsup and Vinegar to top of pot
- Cover with boiling water
- Bake 6 hours or more
- Add more water as Beans cook
