Ingredients

Ingredient Amount Notes
Dried Beans 1½ cups  
Dry Mustard 1 Tbsp  
Salt 1 tsp  
Brown Sugar 3 Tbsp  
Molasses 2 Tbsp More to Taste
Salt Pork ¼ lb Cut Up
Onion ¼ cup Sliced

Method

  1. Soak beans overnight in cold water, using twice as much water as beans
  2. In morning heat to just below boiling point
  3. Cook 2 hours or until shin curls on beans when blown on
  4. Preheat oven to 250 °F
  5. Cut up Salt Pork
  6. Cut up Onions
  7. Drain beans reserving water
  8. In a baking crock place alternate layers of beans/seasonings and salt pork
  9. Cover with water from beans
  10. Bake 6-8 hours, adding water as needed during cooking
