Ingredients

| Dried Beans | 1½ cups | |
| Dry Mustard | 1 Tbsp | |
| Salt | 1 tsp | |
| Brown Sugar | 3 Tbsp | |
| Molasses | 2 Tbsp | More to Taste |
| Salt Pork | ¼ lb | Cut Up |
| Onion | ¼ cup | Sliced |
Method
- Soak beans overnight in cold water, using twice as much water as beans
- In morning heat to just below boiling point
- Cook 2 hours or until shin curls on beans when blown on
- Preheat oven to 250 °F
- Cut up Salt Pork
- Cut up Onions
- Drain beans reserving water
- In a baking crock place alternate layers of beans/seasonings and salt pork
- Cover with water from beans
- Bake 6-8 hours, adding water as needed during cooking
