| Light Cream | 1 cup | |
| Crab Meat | 1 cup | Flaked |
| Salt | ½ tsp | |
| Pepper | ¼ tsp | |
| Red Pepper | Dash | |
| Eggs | 12 | Lightly Beaten |
| Parsley | 2 Tbsp | Chopped |
Method
- Chop Parsley
- Lightly beat eggs
- Melt butter in a large skillet
- Add Crab, Cream, Salt, Pepper, and Red Pepper
- Heat through
- Pour eggs into crab mixture
- Cook quickly, lifting (with spatula) from bottom and sides as it thickens
- Cook about 6-8 minutes until eggs are thickened but still moist
- Sprinkle with Parsley
