Ingredients

Ingredient Amount Notes
Butter ¼ cup  
Light Cream 1 cup  
Crab Meat 1 cup Flaked
Salt ½ tsp  
Pepper ¼ tsp  
Red Pepper Dash  
Eggs 12 Lightly Beaten
Parsley 2 Tbsp Chopped

Method

  1. Chop Parsley
  2. Lightly beat eggs
  3. Melt butter in a large skillet
  4. Add Crab, Cream, Salt, Pepper, and Red Pepper
  5. Heat through
  6. Pour eggs into crab mixture
  7. Cook quickly, lifting (with spatula) from bottom and sides as it thickens
  8. Cook about 6-8 minutes until eggs are thickened but still moist
  9. Sprinkle with Parsley
