Ingredients

Ingredient Amount Notes
Crab Meat 1 lb  
Butter 1 Tbsp  
Flour 2 Tbsp  
Milk 1 cup  
Eggs 2 + Extra 2 hard boiled - extra for breading
Parsley litte  
Salt 1 tsp  
Onion Juice 1 tsp  
Pepper ¼ tsp  
Mayonnaise 1 Tbsp  
Bread Crumbs    

Method

  1. Hard boil 2 eggs
  2. Cool and Separate yolks from whites, discarding whites
  3. Grate egg yolks and set aside
  4. Combine butter, flour and milk
  5. Boil while stirring until thick
  6. Add crab, grated egg yolks, parsley, salt, onion juice, pepper and mayonnaise
  7. Stir and cook 5 minutes
  8. Allow to cool
  9. Add a tablespoon at a time to bread crumbs
  10. Dip each breaded tablespoon in egg, and then in the bread crumbs again
  11. Deep Fry
