Ingredients

| Crab Meat | 1 lb | |
| Butter | 1 Tbsp | |
| Flour | 2 Tbsp | |
| Milk | 1 cup | |
| Eggs | 2 + Extra | 2 hard boiled - extra for breading |
| Parsley | litte | |
| Salt | 1 tsp | |
| Onion Juice | 1 tsp | |
| Pepper | ¼ tsp | |
| Mayonnaise | 1 Tbsp | |
| Bread Crumbs |
Method
- Hard boil 2 eggs
- Cool and Separate yolks from whites, discarding whites
- Grate egg yolks and set aside
- Combine butter, flour and milk
- Boil while stirring until thick
- Add crab, grated egg yolks, parsley, salt, onion juice, pepper and mayonnaise
- Stir and cook 5 minutes
- Allow to cool
- Add a tablespoon at a time to bread crumbs
- Dip each breaded tablespoon in egg, and then in the bread crumbs again
- Deep Fry
