Ingredients

Ingredient Amount Notes
Crab Meat 3 cups Fresh
Salt 1/2 tsp  
Pepper 1/2 tsp  
2 Eggs 2 + 2 Beaten - See modern notes
Onion 1/3 cup Finely chopped
Dry Mustard 2 tsp  
Mayonnaise    
Flour    
Bread Crumbs   Fine Dry Bread Crumbs

Method

  1. Mix well
  2. Shape into cakes
  3. Roll cakes in flour
  4. Dip cakes into beaten eggs, then Bread Crumbs
  5. Fry in hot fat
  6. Drain on paper

Modern Notes

  • The amount of eggs is unclear. It calls for “2 eggs beaten” to be included in the mixture, and also for dipping the mixture in “2 beaten eggs”. I would have 4 eggs on hand, but only beat 2 at first. Make the mixture without eggs, and add 2 eggs if it won’t hold together. Or you know, give it a try with 4 eggs? Let me know how it works either way. – David S
