Method
- Beat an egg
- Add a little milk, salt and pepper
- Marinate crab in egg mixture for a few minutes
- Roll marinated crab in flour or cornmeal
- Heat oil to 400 °F
- Fry fast
Notes From Gran
- Slow cooking makes crabs tough
- Good if fried in half butter and half fried our salt pork. - Rhode Island Way
Modern Notes
- I enterpret the Note from Gran to mean that she would cook salt pork in a pan, leave the left over grease in the pan, add some butter, and use that as the frying oil. – David S
