Ingredients

Crab    
Eggs 1  
Milk little  
Salt    
Pepper    
Flour   May substitute cornmeal
Cornmeal   May substitute flour

Method

  1. Beat an egg
  2. Add a little milk, salt and pepper
  3. Marinate crab in egg mixture for a few minutes
  4. Roll marinated crab in flour or cornmeal
  5. Heat oil to 400 °F
  6. Fry fast

Notes From Gran

  • Slow cooking makes crabs tough
  • Good if fried in half butter and half fried our salt pork. - Rhode Island Way

Modern Notes

  • I enterpret the Note from Gran to mean that she would cook salt pork in a pan, leave the left over grease in the pan, add some butter, and use that as the frying oil. – David S
