Deviled Clams

Ingredients

Clams | 2 cups | Finely minced |
Onion | 1/2 cup | minced |
Green Peppers | 1/3 cup | Chopped |
Celery | 1/3 cup | Chopped |
Bread Crumbs | 1 1/3 cup | Dry Bread Crumbs |
Heavy Cream | 1 cup | |
Eggs | 2 | Beaten |
Butter | 3 Tbsp | Melted |
Prepared Mustard | 2 tsp | |
Salt | 1 1/2 tsp | |
Pepper | 1 tsp | |
Parmesan | Grated | |
Bacon | 1/2 inch per clam |
Method
- Preheat oven to 350F
- Shuck clams, preserving shells
- Finely mince clams
- Mince onion and add to clams
- Chop Green Pepper and Celery and add to clams
- Add Bread crumbs
- Stir in heavy cream
- Beat eggs and stir in
- Melt butter and stir in
- Stir in mustard, salt and pepper
- Scoop mixture back into clam shells
- Bake 20 minutes
- Remove from oven
- Sprinkle heavily with Grated Parmesan
- Place 1/2 inch strip of bacon on top of each shell
- Heat until bacon is crisp
