Ingredients

Ingredient Amount Notes
Clams 2 cups Finely minced
Onion 1/2 cup minced
Green Peppers 1/3 cup Chopped
Celery 1/3 cup Chopped
Bread Crumbs 1 1/3 cup Dry Bread Crumbs
Heavy Cream 1 cup  
Eggs 2 Beaten
Butter 3 Tbsp Melted
Prepared Mustard 2 tsp  
Salt 1 1/2 tsp  
Pepper 1 tsp  
Parmesan   Grated
Bacon 1/2 inch per clam  

Method

  1. Preheat oven to 350F
  2. Shuck clams, preserving shells
  3. Finely mince clams
  4. Mince onion and add to clams
  5. Chop Green Pepper and Celery and add to clams
  6. Add Bread crumbs
  7. Stir in heavy cream
  8. Beat eggs and stir in
  9. Melt butter and stir in
  10. Stir in mustard, salt and pepper
  11. Scoop mixture back into clam shells
  12. Bake 20 minutes
  13. Remove from oven
  14. Sprinkle heavily with Grated Parmesan
  15. Place 1/2 inch strip of bacon on top of each shell
  16. Heat until bacon is crisp
