Baked Ham

| Pickle Juice | Use Pickle or Fruit Juice | |
| Fruit Juice | Canned - Use Pickle or Fruit Juice | |
| Brown Sugar | 1 cup | |
| Pineapple Preserves | ¾ cup | |
| Vinegar | 3 Tbsp | |
| Mustard | 1 tsp |
Method
- Preheat oven to 275 °F
- Place ham on rack in shallow uncovered baking pan, fat side up
- Place cloves in fat (i.e. top) side of the ham, about 1 inch apart
- Bake about 30 minutes per pound
- While baking:
- Place foil over ham, not too tight
- Pour pickle juice or canned fruit juice over ham about 3 times
- ombine Brown sugar, pinapple preserves, vinegar and mustard to make a glaze
- About 30 minutes before ham is done, put the glaze on it
Notes From Gran
- Serve hot or cold
- Whan ham slices get poor grind for ham salad or croquettes
- Use the bone for bean soup
- “Hearty corn bread complements the flavor of fine Virginia Ham”.
Modern Notes
- The original recipe calls for a Gwaltney Pagan Ham, as best I can tell. Gwaltney is a brand which still exists, but no longer sells ham. – David S
