Mayonnaise ½ cup  
Flour ¼ cup  
Salt ½ tsp  
Pepper    
Milk 2 cups  
American Cheese ¼ lb cubed
Shallot ¼ cup Chopped
Pimento ¼ cup Diced
Ham 1½ cups Cooked - Cubed
Eggs 4 Hard boiled
English Muffins   Toasted - for serving

Method

  1. Hard-boil eggs and allow to cool
  2. Chop eggs
  3. Chop shallot
  4. Dice pimento
  5. Cube cheese
  6. Blend mayonnaise, flour, salt, and pepper
  7. Gradually stir in milk
  8. Cook and stir until thickened
  9. Add cheese, shallot, and pimento
  10. Heat until cheese melts
  11. Add ham and eggs
  12. Heat
  13. Toast english muffins, and serve Ham and Cheese on muffins
