| Ham | 1½ cups | Cooked - Cubed |

| English Muffins | Toasted - for serving |
Method
- Hard-boil eggs and allow to cool
- Chop eggs
- Chop shallot
- Dice pimento
- Cube cheese
- Blend mayonnaise, flour, salt, and pepper
- Gradually stir in milk
- Cook and stir until thickened
- Add cheese, shallot, and pimento
- Heat until cheese melts
- Add ham and eggs
- Heat
- Toast english muffins, and serve Ham and Cheese on muffins
