Ingredients

Ingredient Amount Notes
Filet Of Beef 3 lb  
Shallots ½ cup Chopped
Red Wine 1½ cup Dry
Butter ¼ lb  
Parsley 2 tsp Minced
Salt 1½ tsp  
Black Pepper ¼ tsp Fresh Ground

Method

Beef

  1. Preheat oven to 400 °F
  2. Trim the beef
  3. Roast 35 minutes or desired rareness
  4. Slice beaf ½ inch thick
  5. Serve with Sauce

Sauce

  1. Make Sauce while beef roasts
  2. Chop Shallots
  3. Mince Parsley
  4. Cook shallots in wine until reduced to ¼ original size
  5. Let cool a little
  6. Cream butter, parsley, salt, and pepper
  7. Blend into wine mixture
