| Shallots | ½ cup | Chopped |
| Red Wine | 1½ cup | Dry |
| Butter | ¼ lb | |
| Parsley | 2 tsp | Minced |
| Salt | 1½ tsp | |
| Black Pepper | ¼ tsp | Fresh Ground |
Method
Beef
- Preheat oven to 400 °F
- Trim the beef
- Roast 35 minutes or desired rareness
- Slice beaf ½ inch thick
- Serve with Sauce
Sauce
- Make Sauce while beef roasts
- Chop Shallots
- Mince Parsley
- Cook shallots in wine until reduced to ¼ original size
- Let cool a little
- Cream butter, parsley, salt, and pepper
- Blend into wine mixture
