| Chicken Breasts | 4 | cut in half and boned |
| Shake’n Bake Seasoning | 1 pack | |
| English Muffins | 4 | split and toasted |
| Cooked Ham | 4 slices | cut in half |
| Butter | 2 Tblsp | |
| Flour | 4 Tblsp | |
| Water | 1 cup | |
| White Pepper | ⅛ tsp | |
| Salt | ¾ tsp | |
| Eggs | 2 | beaten |
| Lemon Juice | 2½ Tblsp | |
| Cayenne | dash |
Method
- Preheat broiler.
- Coat chicken evenly with seasoning.
- Place chicken skin side down on broiler pan.
- Broil 6” from heat for 20 min.
- Turn chicken and broil 7 min on the other side.
- Make mock Hollandaise sauce while chicken broils.
- Cook butter, flour, water, pepper, and salt.
- Remove from heat, pour on beaten eggs, and beat well.
- Cook for 1 min.
- Stir in cayenne and lemon juice.
- Arrange toasted muffins with ½ ham slice and ½ chicken breast on each.
- Cover generously with mock Hollandaise sauce.
