Ingredients

Chicken Breasts 4 cut in half and boned
Shake’n Bake Seasoning 1 pack  
English Muffins 4 split and toasted
Cooked Ham 4 slices cut in half
Butter 2 Tblsp  
Flour 4 Tblsp  
Water 1 cup  
White Pepper ⅛ tsp  
Salt ¾ tsp  
Eggs 2 beaten
Lemon Juice 2½ Tblsp  
Cayenne dash  

Method

  1. Preheat broiler.
  2. Coat chicken evenly with seasoning.
  3. Place chicken skin side down on broiler pan.
  4. Broil 6” from heat for 20 min.
  5. Turn chicken and broil 7 min on the other side.
  6. Make mock Hollandaise sauce while chicken broils.
  7. Cook butter, flour, water, pepper, and salt.
  8. Remove from heat, pour on beaten eggs, and beat well.
  9. Cook for 1 min.
  10. Stir in cayenne and lemon juice.
  11. Arrange toasted muffins with ½ ham slice and ½ chicken breast on each.
  12. Cover generously with mock Hollandaise sauce.
