Ingredients

| Chicken | 4-6 lb Hen | “Stewing Hen” |
| Onion | 1 cut up | |
| Salt | To Taste | |
| Pepper | To Taste | |
| Flour | 3 Tbsp | |
| Milk | 1 Quart |
Method
- Cut up chicken
- Put chicken into large frying pan
- Cover chicken with water
- Cut up onion and add to frying pan
- Add Salt and Pepper to taste
- Cover
- Cook slowly for 2 1/2 hours or until chicken is tender
- Remove lid and cook down liquid
- Brown chicken in its own fat
- Remove chicken pieces as they brown evenly
- Add Flour
- Add milk
- Stir constantly until mixture boils for a few minutes

- Serve gravy over chicken - hot
