Ingredients

Ingredient Amount Notes
Chicken 4-6 lb Hen “Stewing Hen”
Onion 1 cut up  
Salt To Taste  
Pepper To Taste  
Flour 3 Tbsp  
Milk 1 Quart  

Method

  1. Cut up chicken
  2. Put chicken into large frying pan
  3. Cover chicken with water
  4. Cut up onion and add to frying pan
  5. Add Salt and Pepper to taste
  6. Cover
  7. Cook slowly for 2 1/2 hours or until chicken is tender
  8. Remove lid and cook down liquid
  9. Brown chicken in its own fat
  10. Remove chicken pieces as they brown evenly
  11. Add Flour
  12. Add milk
  13. Stir constantly until mixture boils for a few minutes

  • Serve gravy over chicken - hot
