Marinated Rabbit - Oven Fried

Ingredients

| Wine Vinegar | 2 cups | |
| Parsley | 2 cups | Chopped |
| Garlic | 2 cloves | Chopped |
| Salt | 2 tsp + extra | |
| Pepper | 1/2 tsp + extra | |
| Rabbit | ||
| Flour | ||
| Butter | 1/2 cup |
Method
- Chop garlic and parsley
- Add to vinegar to make marinade
- Add 2tsp salt and 1/2 tsp pepper to marinade
- Marinate rabbit in refrigerator for 24 hours
- Preheat oven to 425F
- Add butter to oven plan
- Dry rabbit and dredge in flour, salt, and pepper
- Add rabbit to oven pan
- Bake 30 minutes
- Turn rabbit
- Bake 30 minutes more or until done
