Ingredients

Ingredient Amount Notes
Squabs 2 Split in half
Potatoes 4 Diced
Onion 1 Chopped
Parsley 1 Tbsp Chopped
Pepper 1/4 tsp  
Salt 1 + 1 1/4 tsp  
Flour 2 cups  
Baking Powder 4 tsp  
Butter 2/3 cup + extra  
Water 1/2 cup cold + 3 cups boiling  

Method

  1. Preheat oven to 350F
  2. Dice potates
  3. Chop onion and parsley
  4. Butter casserole dish
  5. Place layer of potates in casserole
  6. Place layer of onions and parsley on top of potatoes
  7. Split squab in half, rub with 1 tsp salt and 1/4 tsp pepper
  8. Place squab in casserole on top of onions
  9. Make a pie crust dough of Flour, Baking Powder, 2/3 cup butter, 1 1/4 tsp salt, and 1/2 cup cold water
  10. Roll out dough to 1/4 inch thick
  11. Cut dough into 2 inch squares
  12. Arrange dough squares on top of squab
  13. Boil 3 cups water and add to casserole
  14. Cover and bake for 1 hour or until all is tender
  15. Rmove cover and brown under broiler
