Tempura Batter for Fish

| Flour | 1¾ cups | |
| Egg | 1 | Well-beaten |
| Water | 1¾ cups | |
| Salt | dash | |
| Filet Of Fish |
Method
- Beat egg well
- Mix egg, flour, water and salt
- Refrigerate at least ½ hour
- Trim dark meat from filet
- Cut filet diagonally into pieces
- Heat deep oil to 305 °F - 370 °F
- Dip fish in mixture
- Fry until cooked through
