Ingredients

Ingredient Amount Notes
Lobster 2 Tails 1½ to 2 lbs each
Butter ¼ cup + 2 Tbsp + 2 Tbsp Butter goes in three separate times
Flour 2 Tbsp  
Prepared Mustard 1 tsp  
Salt ½ tsp  
Paprika 1 tsp  
Cayenne dash  
Cream 1½ cup Use cream or Half+ Half, not both
Half + Half 1½ cup Use cream or Half+ Half, not both
Cheddar Cheese 2 cups Shredded
Worcestershire Sauce 1 tsp  
Green Peppers ¼ cup Diced
Mushrooms ½ lb Sliced - Fresh or Canned
Cracker 2 Tbsp Use Cracker or bread crumbs, not both
Bread Crumbs 2 Tbsp Use Cracker or bread crumbs, not both
Parmesan 2 Tbsp  

Method

Cook Lobster

  1. Salt water and bring to a rapid boil
  2. Cook tails 10-12 minutes
  3. Remove meat from shells, preserving shells
  4. Cut meat into bite-sized pieces

Prepare Cheese Sauce

  1. Shred Cheddar Cheese if not pre-shredded
  2. In a saucepan, melt 2 Tbsp of butter
  3. Blend in Flour, Prepared Mustard, Salt, Paprika, and Cayenne
  4. Gradually add cream of Half + Half
  5. Cook, stirring contantly until thickened
  6. Turn off heat
  7. Add Shredded Cheddar Cheese and Worcestershire Sauce
  8. Stir until Cheese Melts

Prepare Mushrooms and Peppers

  1. Slice Mushrooms if not pre-sliced
  2. Dice Green Peppers
  3. In a small fry pan, melt ¼ cup butter
  4. Sauté Green Peppers and Mushrooms about 5 minutes

Fill the Shells

  1. Combine Lobster, Cheese Sauce, and Sauteed Mushrooms/Peppers
  2. Fill shells
  3. Melt 2 Tbsp butter
  4. Top each shell with:
    • 1 Tbsp of Cracker or Bread Crumbs
    • 1 Tbsp of Melted butter
    • 2 Tbsp of Parmesan
  5. Broil filled shells until sauce is bubbly and lightly browned
