Method
- Have butcher prepare a standing 3 rib roast:
- cut bones free from meat
- tie meant and bones, fat side up
- Preheat oven to 425 °F
- Put in roasting pan
- Shake on a little Worcesterhire Sauce, black pepper, and salt
- Slice onions in half and pin to fat of meat
- Insert meat thermometer about center of fat set for beef rare
- Roast at 425 °F until meat starts browning
- Reduce to 400 °F and roast until done. 3 ribs takes about 2½ hours to cook
- About 1 hour from done, add potatoes and 1 or 2 cans of onions
- Stir to brown the sides
- Do not add water
