Ingredients

Rib Roast 3 ribs  
Worcestershire Sauce    
Black Pepper    
Salt    
Onions    
Potatoes   Canned white or quartered brown fresh

Method

  1. Have butcher prepare a standing 3 rib roast:
    • cut bones free from meat
    • tie meant and bones, fat side up
  2. Preheat oven to 425 °F
  3. Put in roasting pan
  4. Shake on a little Worcesterhire Sauce, black pepper, and salt
  5. Slice onions in half and pin to fat of meat
  6. Insert meat thermometer about center of fat set for beef rare
  7. Roast at 425 °F until meat starts browning
  8. Reduce to 400 °F and roast until done. 3 ribs takes about 2½ hours to cook
  9. About 1 hour from done, add potatoes and 1 or 2 cans of onions
  10. Stir to brown the sides
  11. Do not add water
